DAHI VADE


HOW TO MAKE DAHI VADE:

As soon as the summer season and the thought of cold and sweet comes to mind, the name of Dahi Vade comes first on the tongue. This is everywhere popular in India. The method of making Dahi Vade is very easy, but by keeping some special things in mind, you can make delicious Dahi Vade at home.
A delicious dish of Urad Dal Dahi Vade is not just a lip-smacking snack but is also a symbol of the diversity and richness of Indian cuisine.
 
DIFFERENT TYPES AND NAMES OF DAHI VADE:
The specialty of Dahi Vade of Urad Dal is that every region makes it in its own style.
In Rajasthan, moong dal is used instead of urad dal and served with spicy mint chutney.
In Punjab, it is made from urad dal and enjoyed with tamarind chutney.
In Gujarat it is called “Dahi Vada” and sugar is added to give it a slightly sweet taste.
“Dahi Vada” has its own taste in South India, which is served with coconut chutney.
 
INGREDIENTS:
• Urad dal: 1 cup
• Green chilli: 3-4
• Ginger: 1 inch piece
• Asafoetida: 1 pinch
• Cumin: 1/2 tsp
• Salt to taste
• Oil for frying: as required
 
FOR PREPARING CURD:
• Curd: 2 cups
• Salt to taste
• Cumin powder: 1/2 tsp
• Chaat masala: 1/2 tsp
• Green coriander: 2-3 teaspoons, finely chopped
 
FOR SPICES:
• Cumin: 1 tsp
• Red chilli powder: 1/2 tsp
• Chaat masala: 1/4 tsp
• Black salt: 1/4 tsp
 
HOW TO MAKE DAHI VADE:
PREPARING DAL:
1. Soak 1 cup urad dal in water for 5-6 hours in a vessel.
2. After soaking, wash the lentils thoroughly and drain the water.
3. Put it in mixer and grind it finely.
4. Add 3-4 finely chopped green chillies, 1 inch piece of ginger, 1 pinch of asafoetida, 1/2 tsp cumin and salt as per taste to the grind dal.
5. Mix all the spices well with the dal and keep covered for 10 minutes.
 
FRY (15 MINUTES):
• Heat oil in a pan. To check that the oil is moderately hot, you can check by adding a little pulse, if it comes up immediately then the oil is at the right temperature.
• Lightly wet your hands and make small round balls from the dal mixture.
• Slowly drop these vadas in hot oil and fry on medium flame till they become golden brown.
• Take out the fried vadas on a plate to remove excess oil.
 
PREPARING CURD (5 MINUTES):
• Take 2 cups of fresh curd in a bowl. Add salt as per taste, 1/2 tsp cumin powder, 1/2 tsp chaat masala and 2-3 tsp finely chopped green coriander and mix well. The curd should be slightly thick.
 
SERVING DAHI BADE (5 MINUTES):
• Keep the fried Vadas in a plate.
• Add prepared curd on top and spread it.
• Sprinkle some roasted cumin, chili powder, chaat masala and black salt on top of Dahi Vada.
• If you want, you can also add green chutney and tamarind chutney for taste.
 

SOME SPECIAL THINGS TO MAKE DAHI VADE:
• Grind the lentils well, so that they become smooth.
• Fry the Vadas on medium flame, so that they get cooked well from inside also.
• Beat the curd well, so that it becomes thick and creamy.
• You can increase the quantity of spices as per your choice.
