Veggie Black Bean Enchilada is a Mexican recipe that usually involves filling a flour tortilla and then baking it. Major ingredients used include black beans, sweet corn, bell peppers, paneer and cheese. This is a popular and delicious dish which I have told you about before.

INGREDIENTS:
ENCHILADA SAUCE:
• 2 cups tomatoes, chopped
• 1 medium onion, chopped 
• 2-3 garlic cloves, chopped
• 1 red chilli, chopped
• 1 tablespoon all purpose spice mix
• Salt as per taste

FILLING:
• 1 cup black beans, cooked and crumbled
• 1 cup sweet corn, boiled
• 1 cup bell pepper, cut into long pieces
• 1 cup cheese, chopped
• 1/2 cup green chilli, finely chopped
• 1/2 cup coriander leaves, chopped
• 1 tablespoon red chili powder
• Salt as per taste

REST OF THE INGREDIENTS:
• 10-12 flour tortillas
• 1 cup grated cheese (cheddar or mozzarella)

MANUFACTURING PROCESS:
PREPARE THE ENCHILADA SAUCE:
1.       Heat oil in a pan and add onion, garlic, red chilli and tomatoes.
2.       Firstly cook them for 5-7 minutes, or until the tomatoes become soft.
3.       Now add all purpose spice mix and salt, and cook again for 2-3 minutes.
4.       Put it in the mixer and make a sufficient paste.

PREPARE THE FILLING:
1.       In a large bowl, combine black beans, sweet corn, bell pepper, cheese, green chillies, coriander leaves, red chilli powder and salt.
2.       Mix well so that all the ingredients are mixed well.

MAKE THE ENCHILADA:
1.       Spread enchilada sauce on one piece of flour tortilla.
2.       Then put a spoon of filling on it and again add a little sauce.
3.       Gently roll the tortilla and place on a baking tray. Make all the enchiladas in the same manner.
4.       Add remaining sauce and grated cheese to baking tray.
5.       Preheat the oven to full heat and bake the enchiladas at 350 °F (175 °C) for 20-25 minutes, or until the cheese is melted and the enchiladas are heated through.

SERVING:
1.       Serve the Veggie Black Bean Enchilada hot with coriander leaves and a side of South Indian Salad.
