A unique and adapted version of pasta recipe specially prepared for Indian taste buds with a combination of spices. It is usually prepared for children and adults, but can also be served as a party starter or an appetizer. These saucy, creamy and spicy pastas are generally prepared with the penne pasta version. Pasta or cheese-based dishes are not native dishes in India. Generally, cheese-based dishes are bland or in other words less spicy dishes.

TIPS.
Firstly, it is very important to use juicy and ripe tomatoes for this recipe. This helps you to give the sweet and sour taste of the final product. Secondly, spices like Garam Masala, coriander powder, cumin along with black pepper have been added for desi taste. But if you feel the spices are too much, then skip all of them and just use the Garam Masala mixture. Finally, you can use vegetables as per your choice and preference.

MATERIAL
TO COOK PASTA:
·         Water – 2 liters
·         Salt  - 1 tbsp
·         Pasta – 2 cups
 
FOR THE PASTA SAUCE:
·         Olive oil - 2 tbsp
·         Butter – 1 tablespoon
·         Garlic - 2 (finely chopped)
·         Chilli - 1
·         Ginger – 1 inch (chopped)
·         Onion – ½ (finely chopped)
·         Chilli powder – 1 tsp
·         Turmeric – ½ tsp
·         Tomato Puree – 2 cups
·         Coriander powder – ½ tsp
·         Cumin powder – ½ tsp
·         Garam Masala – ½ tsp
·         Salt – As per taste 
·         Sweet Corn - 2 tbsp
·         Carrot – 2 tbsp (chopped)
·         Capsicum - 2 tbsp (chopped)
·         Pasta – ½ cup boiled water
·         Tomato Sauce – 2 tbsp
·         Mixed herbs - 1 tsp
·         Chilli Flakes – 1 tsp
·         Cheese – ½ cup (grated)
·         Coriander – 2 tbsp (finely chopped)

INSTRUCTION:
1. First, take 2 liters of water and 1 tablespoon salt in a large vessel.
2. Keep the water to boil. Once the water boils, add 2 cups pasta.
3. Boil the pasta for 7 minutes. Be sure to check cooking times on package instructions.
4. Drain the pasta, rinse with cold water and keep it step aside.
5. To prepare the pasta sauce, heat 2 tbsp olive oil and 1 tbsp butter in a large pan.
6. Add 2 cloves of garlic, 1 chilli and 1 inch ginger. Fry a little.
7. Also, fry ½ onion until it shrinks slightly.
8. Keeping the flame on low, add 1 tsp chilli powder and ½ tsp turmeric.
9. Fry the spices on low flame until fragrant.
10. Also, add 2 cups tomato puree and cook well. Cook until the mixture thickens and oil separates.
11. Also add ½ tsp coriander powder, ½ tsp cumin powder, ½ tsp Garam Masala and ½ tsp salt. Fry the spices on low flame until fragrant.
12. Add 2 tbsp sweet corn, 2 tbsp carrot and 2 tbsp capsicum. Cook for one minute.
13. Now add ½ cup pasta boiled water, 2 tbsp tomato sauce, 1 tsp mixed herbs and 1 tsp chilli flakes.
14. Cook until the spices are well combined.
15. Also, add ½ cup cheese and mix well. Cheesy pasta sauce is ready.
16. Now add the boiled pasta and mix well and make sure the pasta sauce is mixed well with the pasta.
17. Finally, enjoy desi Masala pasta topped with cheese and coriander.
 
NOTES:
·         Make sure not to overcook the pasta as it turns mushy when added to the sauce.   
·         You can add extra vegetables of your choice to make it nutritious.
·         Additionally, adding boiled water helps thicken the pasta sauce.
·         Finally, spicy and cheesy pasta recipe tastes great when prepared.
