PANEER CURRY


ABOUT - PANEER CURRY:
We all like Paneer vegetable very much. We make many types of paneer curry and the taste of all is different and excellent from each other. Paneer curry is a very tasty, very creamy and rich dish in which spices are used in very less quantity. This vegetable made in white gravy is also known as Paneer Kali Mirch, Paneer Makhmali, Nawabi Paneer.
This vegetable, which has a very creamy and rich taste, is the life of a wedding party. We can easily prepare this very expensive vegetable available in restaurants at home and that too in restaurant taste. so let's make it.
 
INGREDIENTS:
Paneer - 200 grams
Cream – 2 tbsp
Curd - 1 cup
Cornflour - 1 tsp
Fenugreek leaves – 1 tsp
Black pepper – 1/2 + 1/4 tsp
Small cardamom - 2
Onion - 2
Ginger - 1/2 inch
Green chilli - 1
Garlic cloves – 8-10
Bay leaf - 1
Large cardamom - 2
Desi Ghee – 2 1/2 tbsp
Cashews – 1/4 cup
Cream – 1/4 cup
Sugar - 1/2 tsp
Milk – as per requirement
Salt - as per taste

COOKING INSTRUCTIONS: 
1. First of all, we will collect all the ingredients for making Paneer Curry at one place. Now we will cut the paneer into our desired size.
 
2. Now we will marinate the paneer. For this, put cheese in a bowl. Add half cup curd in it. Add half teaspoon salt. Add a little Fenugreek leaves, two small cardamoms crushed, half teaspoon black pepper powder. Will mix everything well. Now cover it and keep it for 10 minutes.
 
3. While the paneer is marinating, let us prepare the gravy. For this we will chop onion, ginger and garlic. Cut green chillies lengthwise. Now we will put a pan on the gas. Add chopped onion, ginger, garlic, green chilli to it. Also add one bay leaf, big cardamom and cashew nuts. Add a glass of water, cover the lid and cook for 5 minutes.
 
4. While cooking the onion, keep the flame low. After 5 minutes, we will add one more glass of water in it and cover it again and cook for 5 more minutes. After 5 minutes, turn off the gas and take out the onion in a strainer to remove excess water.
 
5. Now we will spread the onion in a plate so that it cools down quickly. After it cools down, we will separate it by removing bay leaves, big cardamom, green chillies and put the remaining ingredients in the mixer and make a fine paste.
 

6. After 10 minutes the paneer is marinated. Now we will put a frying pan on the gas. Add 2 tbsp ghee in it. When the ghee becomes hot, add cheese pieces one by one. Shallow fry on both sides on medium flame. Take out the paneer in a plate.
 
7. Now this pan will be put on the gas once again. Add 1/2 tablespoon more ghee to the remaining ghee. When the ghee becomes a little hot, we will add crushed ginger and black pepper to it. Will fry it lightly.
Now we will add onion paste to it and fry it till it leaves oil.
 
8. When the onion leaves more oil on the sides of the pan, then add whipped curd to it and cook while stirring continuously until the curd is cooked. Now we will add cream into it. Will fry well. When oil leaves the sides of the pan, we will add as much milk as required for the gravy we require. Let the gravy boil well.
 
9. Now at this time we will add salt as per taste and 1 teaspoon sugar. Now we will add fried paneer to it. Cover the lid and let it cook on low flame for 5 minutes. Will turn off the gas after 5 minutes.
 
10. Very tasty, rich and creamy paneer curry is ready. Garnish with black pepper and Fenugreek leaves. Serve this delicious hot vegetable with paratha, naan or kulcha.
