This is a simple Indian curry recipe prepared with sweet corn in a spicy and creamy tomato and onion based sauce. Sweet corn curry recipe has a mild sweet taste and is ideal for those who like less spice. It tastes great when served with tandoori roti, or chapati. Corn recipes have a lot of variations especially with its gravy and curry.
It can be prepared either in a dry curry or even a tangy tomato based curry. Sweet corn gravy recipe is versatile and can be easily mix and matched by adding other vegetables to it. But the most popular corn recipes are palak corn recipe and baby corn masala recipe.
 
VARIATIONS AND SUGGESTIONS:
Firstly, I have roasted the tomatoes well and then mash to make a smooth paste. Alternatively, you can use tomato puree for more gravy consistency. Also add vegetables like capsicum and peas for variation. Lastly, adding cream is optional however it enhances the taste of the sabji recipe.

INGREDIENTS:
1 bay leaf
1 tsp cumin seeds
2 tbsp oil
1 onion (finely chopped)
1 tsp ginger garlic paste
3 tomatoes (finely chopped)
1 tsp Kashmiri red chilli powder
½ tsp turmeric
1 tsp coriander powder
1 tsp salt
¼ cup cashew paste (prepared by soaking 5 cashews in ¼ cup warm milk and blending)
1 cup sweet corn (boiled)
1 cup water
2 tbsp cream (optional)
¼ tsp garam masala
1 tsp kasuri methi (crushed)
2 tbsp coriander (finely chopped)
  
INSTRUCTIONS:
1. Firstly, wash the cashews in a pan and add salt to it. Heat 2 tbsp oil in a large pan and saute 1 bay leaf and 1 tsp cumin seeds till aromatic.
2. Now add 1 onion and saute well.
3. Further add 1 tsp ginger garlic paste and saute till the raw smell goes away.
4. Also add 3 tomatoes and saute for 5 minutes. Alternatively, use tomato puree.
5. Once the tomatoes become soft and pulpy, mash them with the help of a potato masher.
6. Further, add 1 tsp chili powder, ½ tsp turmeric, 1 tsp coriander powder and 1 tsp salt. 
7. Saute on low flame till the spices are cooked completely.
8. Now add ¼ cup cashew paste and mix well. To prepare cashew paste, soak 5 cashews in ¼ cup warm milk for 30 minutes and blend smooth.
9. Next add 1 cup boiled sweet corn and 1 cup water. Stir and mix well adjusting the consistency as needed.
10. Cover and simmer for 10 minutes or till the corn and masala are cooked completely.
11. Now add 2 tbsp cream, ¼ tsp garam masala, 1 tsp kasuri methi and 2 tbsp coriander. Mix well.
12. Finally, serve the corn curry recipe/sweet corn sabzi with roti, naan, kulcha or chapati.
 
NOTES:
1. Firstly, cook the tomatoes well, else the gravy will not taste good.
2. Moreover, adding cream and cashew paste makes the restaurant style corn masala.
3. Additionally, you can also add capsicum or peas along with corn to make it more appealing.
4. Finally, the corn curry recipe/sweet corn sabzi tastes great when served creamy.
