Very few people like to eat tinda.  Therefore, today we will make stuffed tindas in such a way that even the non-eaters will eat it with gusto.  It is easy to make them and their taste will be very amazing.  Spice filled tindas with light gravy will enhance the taste of your food.  So you too make stuffed tindas with this easy method and enjoy their taste with your family.
 
INGREDIENTS
·         Tindas – 8 (350 grams)
·         Mustard oil – 1 tbsp
·         Cumin whole - 1/2 tsp
·         Asafoetida – 1/2 pinch
·         Tomato - 1, big
·         Ginger - 1/2 inch
·         Green chilli - 1
·         Turmeric powder - 1/2 tsp
·         Coriander powder – 1.5 tsp
·         Fennel powder – 1.5 tsp
·         Kashmiri red chilli - 1 tsp
·         Kasoori Methi – 1 tbsp
·         Dry mango powder - 1/4 tsp
·         Garam masala - 1/4 tsp
·         Salt – As per taste
·         Mustard oil – 2 tbsp
·         green coriander – As per taste
 
HOW TO MAKE BHARVA TINDA:
1. Wash and peel 8 tindas well, wash them again and wipe them with a cloth.  Now add 1 tablespoon oil in the pan and heat it.  Add 1/2 teaspoon cumin and 1/2 pinch asafoetida in hot oil and reduce the flame.  Fry them lightly.
 
2. Then add tomato-green chilli-ginger paste (1 tomato, 1 green chilli and 1/2 inch ginger), 1/2 teaspoon turmeric powder, 1.5 teaspoon coriander powder, 1.5 teaspoon fennel powder and 1 teaspoon Add Kashmiri red chilli powder.  Reduce the flame to medium and fry them while mixing well.
 
3. Once lightly roasted, add 1 tablespoon crushed Kasoori Methi to it.  Mix them well, add 1/4 tsp dry mango powder, 1/4 tsp garam masala and 3/4 tsp salt, mix well and switch off the flame.
 
4. Take out the masala in a plate and cool it.  When the masala cools down, take a tinda and cut it in a cross shape, leaving a little space from the bottom.  Then fill it with masala all around.  Similarly, cut the remaining tindas and keep them filled with masala.
 
5. Now add 2 tablespoons oil in the pan and heat it.  Spread oil evenly in the pan and place the tindas in it to roast.  Cover them and cook on flame for 3-4 minutes.  When the time is over, turn them over, cover again and cook for 3-4 minutes.  Similarly, cover and cook the tindas from all sides by turning them repeatedly.
 
6. When it is cooked well from all sides, add the remaining spices and 2-3 tablespoons of water.  Mix them well, cover again and cook for 4-5 minutes.  After 5 minutes, cook them uncovered until the gravy thickens slightly.  Also add some green coriander to it and mix well.  In this way, stuffed tindas will be ready.  Serve them and enjoy their taste.
 
SUGGESTION
·   The spices have to be roasted on low Heat.
·   Tindas are to be cooked on low flame.
