An adapted or Indian Desi version of the popular Italian pizza recipe using wheat flour. Wheat is used for preparation keeping in mind the health benefits, while Kadhai is used as an alternative to the oven as it may not be available in most Indian kitchens. This pizza recipe can be easily served to the entire family including kids and adults and makes a perfect lunch or dinner meal.
Pizza recipe is one such versatile recipe which is a staple of Italy but is widely varied according to local tastes. In the Indian classical, it has been flavored with instant pizza sauce to give a no-nonsense pizza taste. This is one such pizza recipe that specifically targets the Indian taste with pizza sauce from which the chutney is prepared and nothing else is used to prepare the dough.
 
TIPS:
Firstly, i have chosen wheat because of its health benefits, but you are welcome to try the same recipe with Maida or plain flour. You do not need to change any other steps or ingredients and just replace Maida with Aatta. Secondly, the toppings are completely open ended and you can choose any combination of toppings as per your choice. Also if you like meat, you can add any processed meat with vegetable option. Finally, as an alternative to yeast, I have added baking powder.

INGRIDIENTS:
FOR THE DOUGH:
·         Wheat flour - 2 cups  
·         Baking soda – ¼ tsp
·         Baking powder – 1 tsp
·         Salt – ½ tsp
·         Olive oil - 2 tbsp
·         Curd – ¼ cup
·         Water - (for kneading)
 
FOR INSTANT PIZZA SAUCE:
·         Tomato Sauce – ½ cup
·         Chilli Sauce – ¼ cup
·         Chilli Flakes – 1 tsp
·         Mixed herbs - 1 tsp
 
FOR TOPPING:
·         Onion
·         Capsicum
·         Tomato
·         Jalapeno
·         Olives
·         Sweet corn
·         Cheese 
 
INSTRUCTION:
HOW TO KNEAD DOUGH FOR PIZZA:
1. Firstly, in a large mixing bowl take 2 cup wheat flour, ¼ tsp baking soda, 1 tsp baking powder and ½ tsp salt.
2. Mix everything; make sure everything is well combined.
3. Now add ¼ cup curd, 2 tbsp olive oil and water.
4. Start kneading the dough by adding water as required.
5. Knead a smooth and soft dough.
6. Grease the dough with oil and keep it covered for 20 minutes.
 
HOW TO MAKE INSTANT PIZZA SAUCE:
1. Firstly, in a bowl take ½ cup tomato sauce, ¼ cup chilli sauce, 1 tsp chilli flakes and 1 tsp mixed herbs.
2. Mix everything; make sure everything is well combined. 
3. Instant pizza sauce is ready. Keep aside.
 
HOW TO MAKE VEG PIZZA:
1. After the dough has rested for 20 minutes, knead the dough slightly.
2. Pinch the dough into a ball and roll out evenly.
3. Dust with wheat flour and roll gently.
4. Roll out to uniform thickness, keeping it a little thick.
5. Prick the roti with the help of a fork. This prevents the pizza from swelling.
6. Cook the base on a hot pan until half cooked.
7. Now flip and spread pizza sauce over it.
8. Further, top with onion, capsicum, tomato, jalapeno, olives and sweet corn.
9. Top with further cheese and more vegetables.
10. Also, sprinkle chilli flakes and mixed herbs.
11. Cover and simmer for 10 minutes or until the base is cooked well.
12. Finally, cut the pizza dough into pieces and enjoy.
