This is an easy and delicious cutlet recipe prepared with moist paneer mixed with boiled vegetables and spices, which are then pan fried or deep, fried until crispy. This is an ideal party starter or appetizer which is also kids' favorite snack recipe for Tiffin box.
Basically an Indian cottage cheese based cutlet recipe which is loaded with proteins and all the nutrients which not only makes it healthy but also tasty. While there are many ways to prepare this simple paneer cutlet, this recipe is a blend of grated paneer, boiled vegetables and spices. Definitely a treat and starter delight for vegetarian lovers.

INGREDIENTS:
FOR CUTLETS:
·         2 cups paneer/cottage cheese, crumbled
·         1 cup potatoes, boiled and mashed
·         2 tbsp onion, finely chopped
·         ½ carrot, grated
·         1 green chilli, finely chopped
·         ½ tsp ginger paste
·         ½ tsp red chilli powder
·         2 tbsp coriander leaves, finely chopped
·         ½ tsp mango powder/dry mango powder
·         ½ tsp garam masala
·         2 tbsp corn flour
·         ½ tsp salt, or as needed

FOR WHITE FLOUR PASTE:
·         ¼ cup corn flour
·         ¼ tsp black pepper, crushed
·         2 tbsp flour
·         ¼ tsp salt
·         ½ cup water
 
OTHER INGREDIENTS:
·         1 cup bread crumbs
·         oil, for frying

INSTRUCTIONS:
1. Firstly, in a mixing bowl take 2 cups paneer and 1 cup boiled and mashed potatoes.
2. Also add 2 tbsp onion, ½ carrot, 2 tbsp coriander leaves, 1 green chilli and ½ tsp ginger paste.
3. Also add ½ tsp chilli powder, ½ tsp mango powder, ½ tsp garam masala and ½ tsp salt.
4. Add 2 tbsp corn flour and mix well.
5. Mash and mix to make a soft dough. Add more corn flour if necessary.
6. Now prepare flour paste by mixing ¼ cup corn flour, 2 tbsp all-purpose flour, ¼ tsp black pepper, ½ tsp salt and ¼ cup water.
7. Mix well and prepare lump free batter.
8. Grease hands with oil and prepare small ball shaped patties. Applying oil prevents the dough from sticking.
9. Now dip the prepared flour paste and cover the batter from all sides.
10. Coat all sides with bread crumbs. For nice texture, use panko bread crumbs/crushed corn flakes.
11. Now deep fry or pan fry in hot oil. Alternatively, bake in a pre heated oven at 180°C for 12 minutes.
12. Fry on medium flame.  
13. Fry until it turns golden brown.
14. Finally, serve paneer cutlets with mint dip or tomato sauce.
 
SUGGESTION:  
Firstly, homemade paneer made with full cream milk has been used, which will yield moist and creamy paneer. But you can use store bought paneer with good quality and freshness. Secondly, this recipe uses corn starch as a binding agent. Alternatively you can also use bread crumbs, rusk powder, bread slices, crushed oats and refined flour. Finally, do not fry them in very hot oil otherwise the stuffing inside may not cook properly.
